this is so simple, and it really tastes like the more calorie laden version... trust me I've started making this once a week... so good to make panchitos*, huevos or enchiladas rancheros with this on the side, or just make some quesadillas with beans, or roll up for a plain old bean taquito, with or without egg. allrecipes.com/Recipe/refried-beans-without-the-refry/detail.aspxIngredients 1 onion, peeled and halved 3 cups dry pinto beans, rinsed 1/2 fresh jalapeno pepper, seeded and chopped 2 tablespoons minced garlic 5 teaspoons salt 1 3/4 teaspoons fresh ground black pepper 1/8 teaspoon ground cumin, optional 9 cups water Directions Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook on High for 8 hours, adding more water as needed. Note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high. Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency. Due to Crockpot size, I cut back to 2 cups pinto's and 6 cups water, and sorta cut back proportionally on the spices (* panchitos are nachos with a spread of refried beans as the first layer)

If you are a Huevos or Enchiladas Rancheros fan, do not hesitate to try HEB brand Hill Country Fare Salsa Casera for topping your Huevos.. it's just as good as homemade or Herdez.
also super good toping for a Spanish Style Omelet or just some plain old Eggs Scrambled.
