always looking for new uses of cukes, usually I keep them sliced in oil and vinegar with a little sugar and chopped onion, tomato, pepper, etc.. Good to pour over a wedge of lettuce or mass of spinach leaves or sliced tomatoes for an instant salad dressing. Tried something new. 1 cuke (sliced and peeled) 1/4 med white or yellow onion chopped S & P Ran mixture through Black & Decker Mini Chopper (made a mush) added 1 tsp Extra Virgin Olive Oil added 1 TBL Balsamic Vinegar Stirred served on Saltines... so darn good.. will try next cuke with Red Wine Vinegar instead of Balsamic.
