a while back, spoke to a buddy from the Valley whose wife made the best salsas, pico de gallo, guacamole.. etc.. asked him what her secret was.. "She always peels her tomatoes".. do any of you always peel? I've been meaning to learn how to do that...

thats the canning way of doing a tomato... didnt even watch the video but you boil it till the skins break/crack away then put them in cold water... cookin and blanching them.... as in hot & ice cold water..

For a good salsa or tomato sause .. MUST get those skins off .. you can also put them in the oven and they will come out of their skins after about 15 minutes in a 450 oven on a sheet pan. Just let them cool off and use your hands to siene out the skins and cores.
