Does anyone have a different or unusual sweet potato casserole recipe?

Depends on what you consider different .. maybe this is "different" enough for you .. lol
3-4 fresh sweet potato's 1/2 stick butter 1/2 cup milk or cream 1/3 cup crushed pineapple *no juice* 1/3 cups crushed pecans 1/4 tsp salt
Peel potato's and cook as you would regular potato's for mashed potato's. Add salt to water and boil When they are fork tender .. drain well. Keep potato's in hot pot that you cooked them in .. to kind of "dry" them out. Add the butter in chunks .. then SMASH them with a potato masher all at once. When they are somewhat mashed .. add all the rest of the ingredients and fold into the sweet potato mixture. Make sure to stir well between each addition. Pour into a greased/buttered casserole dish and put into the oven 375 degrees for about 20 minutes .. YUMMY~!

The pineapple juice sounds good with them. I found one with mashed bananas but my husband cant eat bananas...Thank you very much

I want to try that one with the bananas.. sounds really good,.. how about some empanada's.. google empanada's with sweet potato fillings.. sort of a turn over type outfit.. you could use them for a kolache filling, that would be novel..

I've had them with the crushed pinapple and pecans and i think they had a little shredded coconut in it too.. topped with melted marshmellows..
