I got this from a weight watchers meeting....it's realy good! Just 1 point per cup:
1 bag of hash brown potatoes (either O'Brien or sautee some bell pepper and onion in a little olive oil and add that.)
3 cans of fat free chicken broth
1 pkg of fat free white gravy mix (Pioneer)
Sautee the onions and bell pepper in a couple of tsps of olive oil or skip this step and use the O'Brian hash browns.
Add two cans of chicken broth and bring to a boil.
Whisk the gravy mix with the remaining can of chicken broth. Add to the mixture when it begins to boil. Turn to low setting and let it cook for a few minutes.
This is a geat lo-cal potato soup.
