this is what i'm going to make overnight~ Mmmm~i luv brisket~ 2 Tablespoons of Chili Powder 1 Tablespoon of Sugar 2 Tablespoons of Salt 2 Teaspoon of Dry Mustard 1 Table spoon of Garlic powder 1 Bay Leaf, crushed 1 Tablespoon of Onion salt 4 lbs of beef Brisket,trimmed 1 Tablespon of Black Pepper 11/2 cups Beef stock Make a dry rub by combining chili powder,salt,garlic and onionpowders,black pepper,sugar,dry mustard and bay leaf. Season the raw brisket on both sides with the rub. Place in a roasting pan and bake overnight at 225 degrees. Add Beef Stock and enough water to yield about 1/2 inch of liquid in roasting pan. Lower oven to 225 deg, cover pan tightly and continue cooking till morning, or until fork tender~

another fun thing to do with a brisket is to make ersatz Barbacoa de Cabeza. 1 beef brisket 4 large Texas yellow onions - sliced 3 heads garlic-peeled and slice each pod 2 bunches cilantro- chopped Salt Pepper S & P whole thing, distribute ingredients all over meat, wrap in foil, cook fat side up 220 to 240 F for 10-12 hours.. serve on tortillas with pico de gallo and salsa (verde or red), you can feed a small army with this one especialy if you've made a batch of refried beans and guacamole.. would work in a big a$$ roaster or crock pot too...

you know you can get that cooked alot faster if you put it all in a turkey roasting bag, pop a couple of holes in the top of the bag to let the pressure out and cover in foil.. cooks in about 4-6 hours.. using less electric and its very tender...

just put it in the oven @195 degrees~should be ready around 9am~now that's a good breakfast~lol

Yeap, the doc checked the oil on the dipstick and said I needed to change my evil ways. I had one level just a bit over and one just a bit under. I have to watch what goes in the tank now. Boy do I miss a good brisket. Maybe after the next test. lol
