I have family that has been diagnosed with diabetes. And with Mother's Day just around the corner. I would love for them to be able to celebrate with a cake again. But I am so scared of serving anything that will harm them in anyway. Does anyone have a great cake and icing recipe that I can use? I have done a bit of research and I understand I have to watch the carbs. I have so far come up with an Angel food cake iced with homemade whipped cream with splenda or equal for sweetening and vanilla extract and topped with fresh strawberries. Is that ok to serve. I would really like to surprise them this year.

I have found that a small serving of the cake you have stated .. is a very good choice. I have two family members who have diabetes and it works with a balanced diet .. so .. make the day special .. but plan a balanced meal to go with the desserts.

there are so many recipes out there that you can make for diabetics! just google "diabetic recipes" "diabetic cake recipes" etc.
