When I moved to Brownsville in the early 70's, I went on a trek to discover the "Ultimate Huevos Rancheros", looking on both sides. .. found some great cafeteria's... but movng up here, nothing beats the Enchilada's Rancheros as offered by Larry's Restuarante here in Wharton. but, I'm tempted to try this low cal version.. it looks good smittenkitchen.com/2008/07/huevos-rancheros/do we have other huevos rancheros fans out there? share your discoveries with us..

Try using the Hatch Santa Fe, its like rotel but thicker its located by the rotel and tomato sauces at HEB.. its some good chit.. if its not hot enough for you add some chipoltle peppers that are in the can located by the can jalapenos. i would think you could saute the sauce and then add your eggs to cook in the sauce.. (without stirring).. I haven't eaten an over easy egg since my first pregnancy, best i can to is a scrambled egg now days.. ;D
