A friend of mine shared this recipe with me. I've tried what he made, and it was quite good. I have a batch made with dark purple seedless grapes that were on sale at HEB. Ready for Christmas. I'll certainly report. If it's better than my homebrew, I'd be surprised, but talk about cheap, sweet wine! It'll make about three gallons or so. I can't wait to make it with dewberries, watermelon, or pears.
Brandy (wine)
3 gals. water 3 lemons sliced thin
10 lbs. sugar 4 boxes white seedless raisins
1 pkg. yeast 2-3 quarts fruit
Combine water, sugar, yeast, fruit, and sliced lemons.
Combine water, sugar, yeast, fruit, and sliced lemons. The more fruit you use the more flavor it will have. Jar or crock big enough to hold it all. You can sanitize them if you want with bleach, iodophor/iodine, whatever you like, but really hot soapy water seems to do just fine.
THIS IS IMPORTANT: Stir every day at the same time of day for 7 days. On the eighth day, add four boxes of white seedless raisins, stir and let stand for 21 days, on the 22nd day, you can bottle. Save and clean your drinking water jugs or coke jugs. Find your funnel if you don't have a siphon. You may get some sediment in the bottle, but it settles out.
The more fruit you use the more flavor it will have.
