Italian Beef Sandwiches Yield: 10-12 Servings
1 boneless beef chuck roast (3-4 pounds), cut in half 3 tablespoons dried basil 3 tablespoons dried oregano 1 cup water 1 envelope onion soup mix 10-12 Italian rolls or sandwich buns
Place roast in a 5 quart slow cooker. Combine basil, oregano and water; pour over roast. Sprinkle with soup mix. Cover and cook on low for 7-8 hours or until meat is tender. Remove meat; shred with a fork and keep warm. Strain broth and skim fat. Serve meat on rolls; use broth for dipping if desired.
**If on a low sodium diet use two packets of low-sodium beef bouillon powder and 2 tablespoons of dried minced onion instead of the onion soup mix. the result is only 10-15 mg of sodium instead of 400-500 mg of sodium.[/color]

wid provolone cheese, green onions and tomato slices marinated in Extra Virgin Olive Oil, Balsamic Vinegar and sprinkled with Basil... maybe some arugula or fancy lettuce.. wash down with a red wine, a chianti, or a rose'... any red really, ... burgandy would suffice.

I made these for supper last night and they were a hit. We melted mozzarella and cheddar cheese on top...sooo good. I couldn't finish mine so I ate it later and I thought it was even better cold!
