hadn't tried this one, got it in the email from a friend
MINUTE CHOCOLATE MUG CAKE
4 tablespoons cake flour(that's plain flour, not self-rising) 4 tablespoons sugar 2 tablespoons baking cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips(optional) a small splash of vanilla essence 1 coffee mug
Add dry ingredients to mug, and mix well Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla essence, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate
cake at any time of the day or night!

I got this in an email several days ago and tried it. It was pretty good. When I do it again, I will need to adjust cooking time as I read the wattage on my microwave after I did it. I will need to cook a shorter time. Would be a fun thing for kids to try because it is so easy. I loved not having a bowl to clean.

thanks for the feedback lavendergirl.. Batch 1 just in! a little spongey, but, dammit, it's chocolate cake! was out of pistachio's... needs a big glob of Blue Bell o'er the top.... Caution: it has to be the cake flour.. I got some Swan's Down Cake Flour in the Box.. up on the top shelf...
I used Splenda.. 1 TBS of plain Splenda and 2 TBS of Splenda Brown Sugar... poifect!

did the same recipe, same technique, made a lemon poppy seed... not that hot.. didn't add cocoa or chocolate chips (naturally), added one half tsp lemon juice, 2 TBS Lemon Peel (Zest), and a cap of both vanilla and lemon extract.. added 2 TBS of poppy seed... (next time I'll do ONE)...
Gave it a C or a C-, should have chopped it up and put it in a lemon pudding..... all my baking mistakes or short comings end up in a pudding... that's just the way it is..
