Hi everyone! I am looking for a recipe for cheese enchiladas. Also if anyone has a good one for cheese enchiladas that would be great also.

I started with the Enchilada sauce in the store. But I wasn't sure how good it would be. The ones I made were not bad, but I have had better.
I just noticed that I typed cheese enchilada twice. One needs to be chicken.

My wife uses that sauce ...add some more stuff and everybody say they are to die for..she makes 2 foil pans and frezzes one...so good..

One needs to be chicken. the Green Enchilada Sauce is what you need then: www.mealsmatter.org/recipes-meals/recipe/42367I've made this using the precooked chicken from HEB (Jalapeno Mesquite, what ever) and it's good with Ground Turkey... I use the white Corn Tortilla rather than the Flour and I use lots of chopped onion

The cheese enchiladas are for the little one. When she saw onions go into the mixture, she was not happy. I tend to forget about Betty Crocker's site and will check out mealsmatter as well.

We always make our enchiladas casserole style, the stuffing and rolling is sometimes a tricky move, you're gonna chop it up anyway, so just make it casserole style... or pancake style.. layer1, layer2, layer3, etc or taco style ... fold over ONCE, like a taco, and lay them stacked across the pan..
on account I'm lazy, and always look for the easy way out..

The little one and I had fun stuffing and rolling! Especially when Snoopy came home and stated they were too fat. Taco style might work though.

use the Hatch enchilada sauce.. two cans of green to one can of red(dont cook sauce), .. heat corn tortillas in microwave covered with a damp paper towel.. dip tortilla in sauce place in dish add cooked meat/cheese and roll.. use left over sauce to cover the entire dish add cheese on top.. cook till cheese is melted. [about 350 degrees for about 20 minutes or so..] Ps, a lazy way to do it is layer it casserole or lasagna style.. i use a different sauce for chicken enchiladas.. i use more of a dumpling broth for them. its made of the broth of the cooked chicken i add cream of chicken soup and or cream of mushroom soup too.. i make it kinda gravy thick.. do the same as above and then when their done i serve them topped with lettuce and tomato and sour cream... tip, use the white corn tortillas they are thinner and easier to work with and if not cooked in microwave long enough they will crack when rolling...

you're welcome, how did they come out?? for some reason i didnt get bookmark notice on this one so i didnt know you replied... just as i spoke, it came in....... jezzzzzzz which one were you looking for the redish sauce or the white/yellow dumpling one? the Hatch green sauce can have a bit of a bite to it if you're serving to kids.. you might want to use two cans of green to two cans of red to cut some of the heat ....

I have been looking for the cream of chicken and cream of mushroom. I had found a recipe in a cookbook, but was unsure of it. When I make them again, I will let you know how they turned out. I know they will be delicious!
