This Salsa Recipe is my mother in law's:
Ingredients: 8 quarts of ripe tomatoes, skinned and drained 8 cups of chopped yellow onions 2 cups of chopped mixed Habanero, Cubanella and Jalapeño peppers 6 cups Cilantro, washed, drained and chopped 4 cups white vinegar 12 tablespoons salt 3 tablespoons garlic powder 8 tablespoons chili powder 8 tablespoons sweet basil 4 regular sized chopped green bell peppers 6 ounces of lemon juice 12 tablespoons white granulated sugar 3 teaspoons black pepper 4 (6oz. cans) tomato paste 2 cups chopped garlic 3 teaspoons cayenne pepper 3 teaspoons oregano
Mix all ingredients together in a large 22 quart stock pot, stir until ingredients are evenly mixed.
Fill pint jars using canning bands and lids suitable for canning and making a good seal and then cook the pint jars in a boiling water pot for 15 - 20 minutes. Do not pressure can this mix.

Oh, yes. She calls it her "Fire Alarm Salsa" but is that not what salsa is about, along with flavor?
