How do you cook the Pattypan Squash? Aka Scallopini Squash? Been Googling, haven't found any good instructions on it ... These Guys Pictured Below:

Same as you cook yellow squash or zucchini. Slice and fry it or boil or steam it and add a bit of butter and salt and pepper, squash casserole....about any way you can think of. I like to also mix the three different kinds together with the butter, salt and pepper or in a casserole.

Tanks Sage. I've been taking some wonderful home home grown yellow crook neck a friend brought me from her garden, slicing it thin, shot of butter flavored pam, .. nuking in a covered glass container for 3 mins, stirring and then anonther minute.. I put a dab of Smart Balance Oleo, sea salt and pepper on it.. just so darn good... I' used to sautee, but this is so much easier.. will try same with the Scallopini..

I do most of my vegetables in the microwave. For just one person, it's too easy. No point in turning on heat on the stove to cook them when they are done in 3 minutes. I cook mine in a glass measuring cup with water just about half way up. It's fast, easy and sooo much less heat.
If you want to play around with recipes, use one of your favorite chicken casserole recipes and substitute the squash for the chicken. My favorite squash casserole was created that way. Of course I had to add a couple of things since I can't leave a recipe alone...lol...but it is really good. You could probably substitute the squash for the meat in just about any casserole recipe and it would be good. It's just one of those vegetables that is about as versatile as it can get.

I like to slice the pati-pan's and put the on the grill .. season like you would any other veggie and give it a drizzle of olive oil .. yumm

thats weird, they did the 'Iron Chef challenge' on squash tonight.. and the main ingredient was squash.. and pattypan was one of them. they said it had no taste... so go to food network.com and look for the iron chef for tonight and see how it was done...
