What's your favorite cake? My mother makes a delicious and easy chocolate pudding cake, where you poke holes in the top and the pudding drips into them. I remember my grandmother making it, so it's been somewhat a tradition and a great memory Mmmmmmmmm

Ingredients: 3 cups all-purpose flour 2 cups granulated sugar 1/2 teaspoon salt 2 teaspoons baking soda 1 teaspoon ground cinnamon 3 eggs, beaten 1 1/4 cups vegetable oil 1 1/2 teaspoons vanilla extract 1 can (8oz) crushed pineapple, well drained 1 cup chopped pecans 2 cups chopped firm ripe banana . Cream Cheese Frosting: 16 ounces cream cheese, softened 1 cup butter, room temperature 2 pounds confectioners' sugar 2 teaspoons vanilla extract 1/2 to 1 cup chopped pecans Preparation: Preheat oven to 350°. Sift flour, sugar, salt, baking soda and cinnamon together into mixing bowl several times. Add eggs and salad oil to the dry ingredients. Stir with a wooden spoon until ingredients are moistened. Stir in vanilla, pineapple and 1 cup pecans. Stir in the bananas. Spoon the batter into 3 well-greased and floured 9-inch round cake pans. Bake for 25 to 30 minutes,or until a wooden pick or cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then turn onto cooling rack. Cool completely before frosting. Cream Cheese Frosting: Combine cream cheese and butter; cream until smooth. Add powdered sugar, beating with an electric mixer until light and fluffy. Stir in vanilla.
Frost the tops of all 3 layers, stack and then frost sides. Sprinkle top evenly with the 1/2 to 1 cup chopped pecans.

Hard to pick a favorite. Hummingbird cakes are very very good. My favorite would depend on my mood at the time...chocolate, strawberry, banana, carrot and red velvet all top my list.

Hard to beat the German Chocolate with a Burnt Cocanut Icing.. laden with nuts... walnuts, pecan, pistachios... all good..
Ex Wife made plain yellow cakes and covered with cool whip and either banana slices or sliced fresh strawberries... darn good throw together cake for in a hurry.. bet a raspberry or blackberry would be just as good... or a MULTI-berry.. several of same..
Pineapple upside down cake .... Italian Rum Cake...

I never never never ever had a cheesecake I couldn't have just picked up and taken off to my own little corner of the world and eaten it all in one fell swoop...
our bud DADoES was a Cheesecake Master, never made one that wasn't Superb!!!

Charbel, do you have a recipe for the Peaches and Cream Cake? I've never tried that and it sure sounds good!!
Just a few of my favorites...chocolate, poppy seed, oatmeal and frozen coconut cake. I plan on making the frozen coconut cake this Sunday for Father's Day.

Peaches & Cream Cake:
1 1/2 cups all purpose flour 2 teaspoons baking powder 1 teaspoon salt 1 cup milk 1/4 cup plus 2 tablespoons margarine, softened 2 large eggs 2 3/4 oz. packages cook and serve vanilla pudding 2 16 oz. cans sliced peaches in syrup, undrained 2 8 oz. pkgs. cream cheese, softened 1 cup plus 2 tablespoons sugar, divided 1 teaspoon cinnamon
Combine first 7 ingredients in a large mixing bowl; beat at medium speed of an electric mixer until smooth. Pour batter into a greased 13x9x2 inch pan.
Drain peaches, reserving 1/4 cup plus 2 tablespoons syrup. set reserved syrup aside. Arrange peach slices over batter. Set aside.
Beat cream cheese at medium speed of an electric mixer until creamy; gradually add 1 cup sugar, beating well. add reserved syrup, 1 tablespoon at a time, beating until smooth. Spoon cream cheese mixture over peaches. Combine remaining 2 tablespoons sugar and cinnamon; sprinkle evenly over cream cheese mixture.
Bake at 350 degrees for 45 minutes. Cool in pan on a wire rack. Yield: 12 servings

Favorite .. Whipped Cream Pound Cake ..from an old old cookbook it is great Other than that .. this sounds crazy .. its a caramel cake with whipped bannana buttercream icing .. tastes like that old snack cake .. bananna flips.

The recipe doesn't say to keep refrigerated but I usually do if I have it over night or for a few days.
