Outstanding Speeksfree! Now you can make some calabacito con pollo or puerco.. and serve it with those little fried tortilla strips like you use in tortilla soup.. In San Antonio Calabacito would be the two summer squashes chopped, with onion, tomate, poblano or greem pepper and a taco meat flavored hamburger or picadillo, more hash or casserole style, not a soup.. In other parts of Texas and Northern Mexico it would be a clear soup with chicken parts and the same veggies... and some versions of same would use pork chopped up... with all sorts of garnishes including cilantro, shredded cabbage, chopped radishes, and fried tortilla strips...

I had that at a restraunt in Austin area once .. it was good. Had the clear broth type with all the extra add ins. My squash .. yellow and zukes .. wont be ready for a few more weeks I think .. not sure how fast they grow after the bloom sets. The bloom just set a day or so ago .. we shall see.
