Pico de Gallo con Aguacate * 6 medium Tomatoes diced * 1 medium Onion diced * 1/4 cup fresh Cilantro chopped. * 2 to 4 Fresh serrano or jalapeño seeded and minced * 2 Ripe Avocados Diced * juice of 1 lime (prevents Avocados from turning black) * salt to taste * The Secret Ingredient - Wishbone Italian Salad Dressing (enough to dampen) * Salt and Pepper to taste *Toss and Serve..
Great with Tostados, Doritos, Fritos, Corn Chips, or just rolled up in a tortilla (I prefer white corn) or can even be heated on a grill in a flour tortilla.. Chase with a Negra Modelo or a Bohemia, or even a Corona or Carte Blanca.

we had fajita's the other day...
I made home made pico de gallo to go with them.. but salsa is a whole different story..
my salsa or picante is a little of this little of that... nothing measured, goes by taste only...

I like salsa verde on my frijoles refritos.. salsa rojo on my enchiladas.. salsa casera on my huevos, and pico de gallo in my tacos and maybe on my enchiladas with the salsa rojo too. I'm weird on tamales.. I like them with ketchup spiked with tabasco red. Weird, but that's what I was raised on.. it's a comfort food thing.

Gallo, rooster, strutting around the barnyard just looking for a hen to jump.. one of my favorite Corridos, El Carcel de Cananea is about a man who goes to the little town of Aqua Prieta and looking for people he might want to meet... or might know already, but he struts around like a rooster..he leaves out the fact he was probably doing some Mescal and the law takes him down.. they apprehend him about 11 pm and take him down North American Style... con pistola al mano.. with guns trained on him.. he rues his arrest... because he was acting so stoopid...

Lemme tell you something good.. speaking of salsas... Tabasco makes serveral hot sauces... I only buy the Original Red and the Jalapeño Green. My favorite, in case you haven't tried it yet is to sprinkle the Green on Kippered Herring and Sardines... unless it's in tomato sauce, then I use the red... so dam good with pork and beans, green onions, and little grape or cherry tomatoes and green onions dipped in Balsamic Vinegar, then real Ocean sea salt... saltine crackers.. what the Hell else is there...

savory salsa
6 tomatoes, chopped 4 garlic cloves, minced 2 seeded and minced jalapenos 2 roasted, skinned and chopped jalapenos 1 red bell pepper, diced 1/2 red onion, chopped 1 tablespoon olive oil 1 lime, juiced Chili powder, salt, and pepper
Combine in bowl and chill for 12 hours
You can leave out the Chili powder and roasted peppers to spare your taste buds if you prefer. Remember you can scrape the seeds out of any hot pepper to remove the “heat” from the pepper. This gives you the flavor without the heat.
sweet salsa
1 can pineapple chunks, drained 1 pepper (your choice), minced 4 fresh mint leaves, cut into shreds
Simmer these for 5 minutes and then remove from fire. Dust the chip with a powdered sugar and cinnamon mixture and dip although this might just be strange with Doritos
