Dewberry picking is in height of season. Won't be long before, it'll be over. We've had a pretty good season at berry patch on our lease property down near the river ... and from digs on public right of ways ... family wise, picked nearly 12 gallons already ... put up 4 gallons into pint jars of preserves, made a mess of cobblers 'n pies, fresh add-to for ice-creams 'n yogurts 'n breakfast cereals
-- if had'nt grown up with 4 sisters 'n mom who loved to cook, I'd not learned what kno bout fixing meals, canning, gardening that I do; of course, having had to bach-it some while in the field with army helped alot too.
WONDERING, how many other guys out there, besides the macho stuff and/or having been retired-military, really kno how to & do the less than masculine mundane chores around the house? Bet, not many!
...anyway, time to cut and run, off on another dewberry foray...

Bottling beer, huh. That's a topic, I'd like to hear more about. Anybody out there make their own wine? Gin? Liquor of other spirits? I've tried my hand at making whiskey and wild grape wine but hadn't had much luck with either -- prehaps ya'll start a thread, tell us how...

If you missed out on the dewberries this year -- tuff luck! Drove out to our 2 choice picking spots, and heat has put the kabosh on these thorny, briar morsels -- past ripeness now, and not much good for dewberry wine neither.
Managed to get 11-quarts in the chest-type freezer for pies 'n cobblers ... got about 16 pints goin (presently) in the pressure cooker to add to the 24 pints of dewberry preserves already made ... gota go, timer just went off!

I saw a program on Food Network a few years ago and went to a Homebrew store in Austin to get the equipment. It is neither a commerical production kit nor capable of producing commercial amounts (at least not yet). I produce about 5 gallons at a time which makes a couple of cases of 12 oz bottles.
They make 'Mr. Beer' commercial production kits, but they are basically a 'paint by numbers' brewing setup. I use recipes that I have garnered from various locales including the homebrew stores and the internet and have made several different varieties. Personally I perfer Pale Ales, which are like mass produced US beers in body but much more flavorful.
If anyone is interested in 'hand crafted brew' if you can ever visit the St. Arnold's brewery in NW Houston for a tour on Saturday afternoon, I highly recommend it.
I tried my hand at wine from wild grapes but failed miserably. Beer is MUCH easier to make and has much better results.

The actual 'brewing' process only takes a couple of hours and is the equivalent of boiling water and adding various ingredients. After it is brewed, it has to sit and ferment for anywhere from a week to 3 weeks depending on the variety.
There's also a homebrew store in Houston- DeFalco's and the people there are very willing to provide information and assistance.

If'n you can measure it out to smaller portions, here's a recipe that uses only 2 cups -- yeah this outa go in the recipe section -- but since this thread's on dewberries .. what the hell: 1 cup sugar 2 tsp butter 3/4 cup milk 1 cup flour 1/8 tsp salt 2 tsp baking powder 2 cups dewberries 1 cup water Cream sugar and butter. Add milk alternately with dry ingredients. Pour batter into greased 7x11 pan and cover with fruit. Over this sprinkle an additional cup sugar and 1 cup water. Bake at 350 deg. til brown. We had dewberry cobbler las'nite with dinner...

Sorry, WMDM, seems I've been plagued with a "dewberry cobbler curse" ... the cobbler won't be coming your way afterall. In a rush for my business, the two transports Fed-Ex & UPS had a little mishap on the way to the farm, and in the aftermath confusion, my neighbor's dog ate the whole thing.
