Anybody ever tried cauliflower mashed for substitute for potatoes? I've always wanted to try it, but have not gotten around to it.
Found this recipe...any other better recipes?
CAULIFLOWER "MASHED" POTATOES
1 head cauliflower 1/8 skim milk Salt & pepper Paprika
Cook cauliflower until fork tender. Place cauliflower (in pieces), skim milk, salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with paprika and bake in hot oven until bubbly.

This is the one I had posted back in May on the recipe thread.
Mock Potato Casserole
16 oz. frozen cauliflower 2 tbs. butter 4 oz. cream cheese 1 lb. bacon cooked and crumbled 8 oz. shredded cheddar cheese one thing of green onions chopped
steam or boil cauliflower until tender.mash and add butter and cream cheese. add remaining ingredients, place in a casserole dish and bake at 350 for about 30-45 min until bubbly.

I frequently make mashed potatoes out of cauliflower. I add a chunk of cream cheese, a little cream, butter, salt & pepper to well-drained boiled or steamed cauliflower then either mash it with a tater masher or whirl it around in the food processor. It doesn't taste exactly like potatoes, but with some roast drippings over it, it's pretty darn good. I also make the cauliflower casserole. It's very good, too.
