Looking for a good Ceviche Recipe... want to try going the low Carb path for awhile... anybody have any good Ceviche Recipes that they use often?
also, due to the price and quality of limes and lemons, can I use the bottled concentrate instead of fresh squozen without any noticeable difference in taste?

DD, I think I would only use the fresh juice or the frozen Minute Maid lemon juice that is fresh squeezed then frozen. I'm just not too sure about the Real lemon stuff and the raw fish. I would rather spend a few more cents and be safe than sorry.

Think you're right... I want to score some good citrus first.. Have been looking at a bunch of recipes, none of them call for the concentrate... will check them out in Spanish too, they'll be the ones I want to use..
Ceviche de Acupulco is the style I want, it has olives and avocado in it..
It's so easy to make, just chop it all up store it sealed in the fridge.. eat

Yes Sage: That's what I'm sorta looking for.. thanks! the Ceviche de Acupulco 1/2 Kg. de filetes de pescado sierra (Spanish Mackerel or Trout) jugo de limón, en cantidad necesaria para recubrirlos 2 jitomates grandes (tomatoes. Romas, or Cherry or Grape) 1 cebolla mediana, picada fina 3 cucharadas de cilantro picado 3 cucharadas de aceite de oliva 2 aguacates orégano seco, desmenuzado chile picado 4 aceitunas grandes sal
Procedimiento: Cortar en hojas de pescado los filetes de pescado, y recubrirlos con jugo de limón.
Así dejar durante varias horas, hasta que el pescado se haya cocido. (I guess you just eyeball it till it looks pickled)
Entonces, escurrir bien los trozos, y lavarlos con agua fría filtrada, y exprimir bien. Luego, mezclarlo con los jitomates, (pelados, sin semillas y picados), el cilantro, el chile picado, la cebolla, el aceite, la sal y un poco de limón. (I don't deseed or peel when using the tiny grapes or cherry)
Se dispone todo en un platón, que se coloca en el refrigerador, antes de llevarse a la mesa, agregarle los aguacates, pelados y partidos en cuadritos, y el orégano.
Servir en copas de cristal, adornando con 1 aceituna. I like them loaded down with the aceitunas. (olives)
