My eldest daughter came up with this one -- Fresh, warm banana nut bread is a simple to make, using this recipe. Just bake a couple of loaves, put on a pot of coffee, and voila: You've got the perfect morning, midafternoon, or bedtime snack for family and guests any time.
Ingredients: 1 box yellow cake mix 1 package Jell-O Instant Banana Cream Pudding & Pie Filling 1/2 cup water 1/2 cup vegetable oil 2 ripe bananas, mashed 4 eggs 1 cup chopped pecans
Preheat overn to 350*F. Grease 2 large or 4 small loaf pans. Now combine all the ingredients in a large bowl. Pour mix into the pans and bake) about 40-45 minutes) until a stick of spaghetti pushed into center comes out clean. Let it cool at least 10 minutes before transferring to serving dish.

Gonna make that this week end.. Thanks... will use pistachios, goes so good with banananana's in fact, I'll look for some pistachio ice cream to put on top some of that...

Thanks... I saw there was two sizes, but they didn't have a banana in big, so I got two smalls.. will use both.. you just can't overpudd a pudding mix..

That does sound good. I'm making my grocery list..lol Oooh pistachios..yep..think I'll try that too. You just cant go wrong with them.

I'm waiting on two banana's to ripen.. not moving so fast put them in a paper bag with a lime.. usually I use an apple and it's like real fast they ripen.. maybe I should put in a teaspoon of applesauce..

It's in the oven now... aroma is maddening... makes me want to take it out and just start eating it with a spooon if I mess it up, I'll just go get some more banana pudding, make it according to instructions on the box, and cover this up with it.... have done that before with brownies and cake items... works every time
smelled something burning... top had risen into top element.. had to pull everything out and lower the rack.. it's into part 2 of the baking cycle now.. should have know that 4 eggs would puff it up a lot..

Most Excellent! I poured the shelled whole pistachios on top like a crust or a frosting.. super flavor, next trip will add a tsp of banana exract

Did you put any of the pistachios inside or just on the top?
Instead of banana flavoring, could you add another banana... or maybe let them get riper?
I'm thinking about toasting the pistachios first, before I put them in.

i'll pass it on to my daughter -- she came up with this recipe. as the messenger, i only gave to ya'll ...lol... as i have cup of coffee & spice of this quikee banana nut bread before her clan awakes, and her husband, myself, a teen son get back to replacing roof on their camphouse up here in e.Tx pineywoods..........

No.. I mixed this all in a 1 qt pyrex measuring bowl and I was filled all the way to the brim.. didn't even have room for the nuts it was so full... I poured the mixture into to loaf pans, and then topped them with the pistachios.. I had the rack one setting to high and they actually rose into the heating elements, so I had to lower the rack. The pisachio's were toasted and in some cases almost blackened, but still tasted good.. they formed like a crust. I only used one small banana pudding mix.. I was thinkng the banana extract would give it an extra banana taste kick.. I use banana extract as a rule in my smoothee's with bananana's.. it enhances the banana taste I haven't had my coffee yet and I'm not too coherent..

banana extract, huh? ... good idea ... have to pass that along too oops, everybody's gettin up this lazy Sunday which means won't be long b4 get my tired old bones back on the roof ... next week gonna have another homemade project that my son-in-law came up with for lifting tools & materials onto home roofs.. til then, have a good one
