Oven Baked "Fried Fish Filletes" I've tried this one with Catfish, Talapia, should work with Flounder Fillets... Egg substitute Kellogg's Corn Flake crumbs Vegetable spray
Spray heavy metal baking sheet or pan. Dip fillets in egg substitute. Roll in Corn Flake crumbs. Place on baking sheet. Spray top with vegetable spray lightly. Bake at 400 degrees until crisp and flakey.
It's fantastic, trust me..
I like to serve it with oven baked french fries. Peel and slice potatoes, then nuke for 4 mins, spray with Pam Veggie Spray, bake in oven at 400 or so till they crisp up. Turn them over about 1/2 way thru. Sprinkle with Salt and/or paprika immediately upon removing from oven...
This some healthy stuff!

Almost time for the annual flounder runs to begin now that the northers are beginning to come more often. I'm ready for some of the saddle-blanket flatfish common to primary bays this time of year.

Or...make a stuffing with bread crumbs, an egg, some onion, bell pepper, celery, a little Old Bay seafood seasoning, and a small carton of crab meat. Cut some pockets in that bad boy, stuff it, place some lemon slices and a couple of slices of bacon across the top and bake until done.
