Cooler weather is a-comin' ;D Does anyone have a tried and true Tortilla Soup recipe that you're willing to share?

i haven't tried it yet, but the recipe sounds pretty tasty. i got it off www.meals.com. It says you need: 2 lbs. ground beef 1/2 cup onion, c hopped 2 pounds whole tomatoes 1 pound tomato sauce 1 pound 14 ounces canned corn (drained) 1 pound 14 ounces canned kidney beans (drained) 2 packages ORTEGA Taco Seasoning Mix - Regular 8 cups tortilla chips 1 cup cheddar cheese (grated) 1/2 cup black olives 1/2 cup sour cream Brown ground beef, drain. Add chopped onions and cook 3 more minutes. Stir in whole tomatoes, tomato sauce, canned corn (drained), kidney beans (drained), and taco seasoning mix. Simmer, uncovered, for 15 minutes. Serve over tortilla chips and garnish with cheddar cheese, sliced black olives, and sour cream. This batch is doubled for 8 people. As far as the olives go, I will definately leave them out, but other than that, my mouth is watering. I am headed for HEB to pick up some supplies now. I'll let you know how it turns out. But, I think I would chop up all the whole tomatoes. I don't like my veggies that big. LOL

Me, too! Now if we could just get the weather to cooperate. Those cool mornings were just a tease. I'm ready for some fall weather.

my sister makes a meannnnnnnn tortilla soup.... i'll get the recipe from her if i remember next time shes down... its to die for!
